Step 1
First we prepare the tomatoes. We wash them thoroughly, remove the stalk area and, if we want, we can also remove the skin. Then we break them into very small pieces and leave them in a container. The carrots should also be peeled and cut into pieces to mix with the rest of the ingredients. Some people prefer to cook these foods first and then peel them. Depending on your preferences, you can do it one way or the other.
Step 2
Do the same with the rest of the vegetables. From the pepper, apart from the skin, we must remove the seeds and leave it cut into pieces in the same container. Next we take the onion (we can use only half an onion if we are not particularly fond of its flavour), peel it and cut it into small pieces. The last ingredient is the garlic. But we are not going to use all of it. We only need half a clove of garlic. Peel it and chop it into small pieces.
Step 3
In this step we are going to crush all the ingredients. If we have chosen ripe pieces but with all their flavour, it will be easier and the result will be incredible. Mash first with a little water and then add some bread, to continue mashing until you get the desired thickness.
Step 4
The secret of any gazpacho recipe is precisely in this step. We must add bread or water to adjust the gazpacho exactly to the style we like the most. In addition, we must also add vinegar and season to taste, at the same time that we are mashing.
Step 5
To finish making this carrot gazpacho, add the extra virgin olive oil and blend again for a couple of minutes more.
Step 6
You can serve this carrot gazpacho straight away, but you will probably prefer to leave it in the fridge for a while, to give it the freshness that is so typical of this recipe. Alternatively, some people prefer to serve it with ice cubes. Keep in mind that with this option the resulting soup is slightly softer and that the coldness of the ice may camouflage the flavour a little.
Step 7
When it comes to serving, you have many options. Divide this carrot gazpacho into bowls and serve with croutons on top. You can also add sprouts of various kinds, seeds of your choice, pumpkin seeds or similar ingredients that complement the unmistakable flavour of this recipe.
